| 1 lb. Diced Lean Pork (or Chicken) |
| 2 Cups Diced Celery |
| 1 tsp. Salt |
| 2 Tbsp. Corn Starch |
| 2 Cups Chow Mein Noodles |
| 2 Cups Water or Meat Stock |
| 1/2 Cup Diced Onions |
| 2 Cups Canned Bean Sprouts |
| 2 Tbsp. Soy Sauce |
| 1/3 Cup Cooking Fat |

Fry meat 5 minutes in cooking fat. Add water to stock, cover, and simmer until meat is tender. Add celery and onion. Simmer 10 minutes more. Moisten cornstarch in a little water and add to first mixture. Add bean sprouts and soy sauce. Season to taste. Serve with hot rice. |
