AUNT BETHYL'S CHOW MEIN

1 lb. Diced Lean Pork (or Chicken)
2 Cups Diced Celery
1 tsp. Salt
2 Tbsp. Corn Starch
2 Cups Chow Mein Noodles
2 Cups Water or Meat Stock
1/2 Cup Diced Onions
2 Cups Canned Bean Sprouts
2 Tbsp. Soy Sauce
1/3 Cup Cooking Fat
 

Fry meat 5 minutes in cooking fat.  Add water to stock, cover, and simmer until meat is tender.  Add celery and onion.  Simmer 10 minutes more.  Moisten cornstarch in a little water and add to first mixture.  Add bean sprouts and soy sauce.  Season to taste.  Serve with hot rice.
