JUANITA'S (Holly's Mom) HAMBURGER STEW

1 lb. Ground Beef (I prefer ground round)
1 Onion, sliced
11/2 tsp. Salt
1/4 tsp. grd. Black pepper 
1 Bay leaf
dash of Cayenne
1 can Diced Tomatoes
3 Potatoes, sliced
3 Carrots, sliced
2 stalks Celery, sliced
1/3 cup chopped parsley, or 1 Tbsp. dried parsley
 

Brown meat, breaking it up into bite size chunks.   Add onion & cook 10 minutes.  Add remaining ingredients, cover, and simmer 30 minutes or longer until vegetables are tender.  Add more seasonings to taste if desired.  

4 servings.

This recipe has been a favorite for over 30 years. 

HINT:  We especially like it for fishing trips, family camping, etc. because you can make it ahead of time, & it reheats easily.  It also can be frozen.  I triple the recipe when I take it to a weekend getaway to share with everyone.
