| 1 lb. Ground Beef (I prefer ground round) |
| 1 Onion, sliced |
| 11/2 tsp. Salt |
| 1/4 tsp. grd. Black pepper |
| 1 Bay leaf |
| dash of Cayenne |
| 1 can Diced Tomatoes |
| 3 Potatoes, sliced |
| 3 Carrots, sliced |
| 2 stalks Celery, sliced |
| 1/3 cup chopped parsley, or 1 Tbsp. dried parsley |

Brown meat, breaking it up into bite size chunks. Add onion & cook 10 minutes. Add remaining ingredients, cover, and simmer 30 minutes or longer until vegetables are tender. Add more seasonings to taste if desired. 4 servings. This recipe has been a favorite for over 30 years. HINT: We especially like it for fishing trips, family camping, etc. because you can make it ahead of time, & it reheats easily. It also can be frozen. I triple the recipe when I take it to a weekend getaway to share with everyone. |
