SWEET POTATO SOUFFLÉ

Preheat oven to 350°

4 cups cooked, mashed sweet potato
1 cup brown sugar
1 12 oz. can evaporated milk
1/2 stick melted butter
2 eggs
1 1/2 tsp vanilla
1/2 tsp cinnamon

 
Put all ingredients together and mix well.  Pour into a greased 9x13 baking dish.  Top with topping (recipe follows) and

Bake in large dish in 350° oven for 1 hour.
 

TOPPING:

1/2 cup chopped nuts (pecans are recommended)
1/2 cup brown sugar
1/4 cup flour
1/2 stick butter, melted

 
Karen says that original recipe called for twice as much topping as is listed above, but she thinks this amount is plenty.  Whichever way, the topping adds a great apple crumble kind of topping.  YUM!
